My good friend, Michele, has a persimmon tree in her front yard. I can drive by anytime and pick a few persimmons...come home and bake something yummy. The other day I dropped by her house and she happened to be home. When I left she handed me a bag of persimmons...not a couple...27 to be exact! I lined them up on my kitchen windowsill to ripen and thankfully they are all ripening at different times.
To use up some of the lovely orange persimmons, I found this recipe here. It makes a lot..2 loaf pans and 8 mini loaves for gifting. I did alter the recipe some. After reading the reviews on the site, I used 1 1/2 cups of brown sugar and 1 cup of organic cane sugar from Trader Joe's instead of 3 cups of white sugar. I used 1/2 cup of applesauce and 1/2 cup of canola oil. I added about 1/2 teaspoon of pumpkin pie spice and about 3/4 cup dried cranberries. The result was tasty. Not too sweet...very fall tasting. It helped that it was warm out of the oven and today happens to be the first day of no sunshine.
On another note..I made it into TWD!
